Tortellini Soup

(Autumn and Winter bring out my love of cooking and baking more than usual. This recipe is soooo good and easy I just had to share. The last time we had this my talented husband made it, and boy is it good with salad and crusty bread!)

Sautee 1/2 cup chopped onion and 1 clove chopped garlic in oil in pot.
Cook until they are light brown and translucent.
Add:
2 cans of chicken stock
1 can water
1 can drained white beans.
Heat to simmer.

Then add:
1 can chopped tomatoes (undrained),
1 teaspoon vinegar,
1 teaspoons Worcestershire sauce,
1/2 cup chopped fresh spinach,
1/2 teaspoon dried Italian herb blend.
Cook for about 10-15 minutes.

Approx. 10 minutes before serving add:
1 bag frozen cheese tortellini and
2 Tablespoons fresh basil finely minced
1 tablespoons shredded parmesan. cheese.

Turn on low and cook 10 minutes.
Serves 6-8 hearty servings.

    That sounds very yummy! I’m a huge fan of soups. So, if you have any other good recipes, esp. hearty, healthy soups, I’ll take them! If you want a few I’ve collected, I’d be glad to share.

    I don’t have many soup recipes, but would love more! My mom makes great soups but doesn’t use recipes, so I’m rather at a loss. I told her she must write them down for me. Feel free to pass yours on to me, thanks for offering!

    Yum!!! I have a recipe very simular to this one, but yours sounds a little more flavorful which my husband will love! I will give it a go. I love soups too!!!

    I love cooking and baking (anything with pumpkin and apples!!!)in the Fall too. I am making corn and cheddar chowder for Izzy’s birthday bash next week. The recipe is from Mexico – so yummy. So not healthy though, sorry Bri. I’ll be sure to give this a try. I could eat soup for dinner every night.

    I’ll do a “soup week” on my blog; that’s easy and that’s about all the good soup recipes I have. I do everything w/ a recipe; i’m not a natural in the kitchen like all the other women in my family seem to be.

    Sounds wonderful and filling, too.
    I have a great recipe for White Chili.

    Paul also like Provencal soup, or as Sarah calls it, “Problem Solved” soup. If anyone wants either, let me know.
